Beef Striploin

Striploins are a boneless cut from the short loin, valued for their perfect balance of flavor and tenderness. This is the same muscle used to cut boneless strip steaks, commonly known as NY Strip Steaks—one of the pricier steakhouse selections.
The specifications for striploins often include numbers indicating the amount of surface fat and lip meat present. These are typically sold as “1×1,” meaning they’ve been mostly trimmed, leaving a traditional layer of fat along the edge of the steak. The striploins are cleaned and easy to slice into steaks at your preferred thickness.
A 1×1 striploin can be sliced into NY strip steaks, vein steaks, or used for high-quality roasts, either whole or in portions.
