The Center Cut Top Sirloin, also known as Top Butt, is the part of the steer where top sirloin steaks come from. It delivers excellent flavor and notable tenderness at a more affordable price than premium cuts like ribeye or striploin.
Top sirloin is ideal for both roasts and steaks, offering a more budget-friendly option among high-quality steak cuts. The whole top sirloin can be sliced into “baseball cut” or “filet” top sirloin steaks, which are thick and round like filet mignons, or into “strip-style” sirloin steaks, which are longer and thinner like strip steaks.
These top sirloins are “center cut,” meaning they are taken from the best, most uniform section of the top sirloin, ensuring superior quality and consistency.
